Amaranth Seeds by Food to Live are 100% amaranth whole seeds of premium quality that carry a large number of benefits. Cultivated in South America a millennia ago, amaranth is considered one of the most ancient types of "pseudocereals". This seed variety was a popular product among former great civilizations of Maya, Inca, and Aztecs who used it for special rituals and ceremonies.
Nutritional Value of Whole Grain Amaranth
Amaranth grain is full of vital microelements our body can benefit from. It is abundant in fiber and protein which are especially valued if you follow a vegan lifestyle. Whole Amaranth Seeds also boast Manganese, Calcium, Phosphorus, Magnesium, Zinc, and Iron. In addition, they are an excellent source of Vitamin B6, Vitamin B5, and Folate. Considering all advantages this single product delivers, it can become a true asset in your pantry.
Versatility Uses
Cooked amaranth obtains a sweet and nutty flavor accompanied by a bit of a crunchy texture. It perfectly serves as a side dish to grilled steaks, roasted chicken, or pork chops. If you want to diversify your diet you can replace your usual whole-grain wheat, rice, quinoa, and polenta cereals with amaranth porridge. Apart from this, you can add cooked amaranth to any dish that requires grains. It tastes delicious in savory salads and stews as well as in sweet pastries, like cookies, and crackers. You even grind whole seeds of amaranth into a fine consistency amaranth flour. Roast seeds for a few minutes, let them cool, and grind them in a flour meal or a spice grinder.
How to cook Amaranth Seeds on the stovetop?
1. The ratio of amaranth to water should be 1 to 2 ½ ;
2. Bring them to a boil;
3. Then turn to low heat and simmer covered for about 20 min (until the grains are cooked and liquid is absorbed)
4. For a creamier consistency of amaranth cereal, add a bit more liquid and cook longer.
